Recipe: Picnic Caviar

Great Summer Recipe! This vegetarian recipe is low in calories and fat and it is high in protein and fiber.

Ingredients:
1/2 cup rice vinegar
1/4 cup extra virgin olive oil
1 tablespoon sugar
2 gloves garlic (2 teaspoons)
1 teaspoon dried basil
1 teaspoon dried oregano
15 ounce can red kidney beans, rinsed and drained
15 ounce can white cannelloni beans, rinsed and drained
15 ounce can garbanzo beans, rinsed and drained
2 ears of corn, boiled and cut
2-3 bell peppers, red/yellow/orange, finely chopped
1/2 small red onion, finely chopped
1/4 cup chopped cilantro

Directions:
Mix together vinegar, oil, sugar, garlic, oregano, and basil in a large bowl.
Add beans, corn, bell pepper, onion, and cilantro. Finish the salad with salt and pepper.

Option: You can add other spices such as tarragon and/or mint.

Pair this dish with a grain such as quinoa or millet for a healthy balanced meal.
